Chinese takeout may be the most phone-dependent category in American food service. - They describe the dish: "the chicken with the broccoli, the spicy one."
Good menu training covers the numbers, the printed names, and the informal names your regulars actually use. That last category is the one vendors underestimate, so ask specifically how it's handled.
Combo plates and modifier rules
Combos are where accuracy is won or lost. A combo plate typically includes a choice of rice, a choice of side, sometimes a soup or an egg roll, and each of those choices may carry an upcharge. Then the caller adds "no onions" and "extra spicy," and asks whether they can substitute lo mein for the fried rice.
The agent has to understand the substitution rules your register already encodes and price the result the way your counter would. This is not a voice-quality question, it's a POS integration depth question. A ticket that arrives in the kitchen with the right dish and the wrong side costs you a remake and a customer. Lunch specials and time windows

An agent enforces the window consistently, quoting the price your POS says applies at the moment of the call. That's a small thing that removes a recurring argument at the counter. Spice levels, allergies, and the "no MSG" call
Chinese takeout gets a specific set of recurring questions, and they're worth handling well because they're asked constantly:
- Spice level. Mild, medium, hot, and whatever your kitchen's actual scale is.
- No MSG. Callers ask this more than any other ingredient question in the category.
- Peanut and shellfish. Oyster sauce and peanut oil turn up in more dishes than customers expect.
- Vegetarian. Which dishes use chicken broth or fish sauce even when the name suggests otherwise.
The agent answers these from what you've told it. If you deliver yourself, a meaningful share of your calls involve an address the caller expects you to recognize. The agent needs to know your delivery boundary and say no clearly when someone is outside it, rather than taking an order your driver won't run. It also needs to capture apartment numbers, gate codes, and cross streets accurately, which is the part callers get impatient about.
