At 3:40 a.m. your line cook is dropping hash browns and your one server is covering six tables plus the register. The phone rings. Nobody gets it. The caller wanted to know whether you are actually open, because the sign on the door says one thing and your Google listing says another.
Overnight is not a volume problem. Total calls between midnight and six are usually a small fraction of your dinner hour. It is a coverage problem. Staffing drops to two people, and the phone still costs the same thirty seconds of attention it cost at 7 p.m., except now those thirty seconds are a third of everyone you have.
After midnight, the phone always loses
During the day, a ringing phone competes with a host who can step away from the stand. At 2 a.m. it competes with the only person who can run food, bus a four-top, and ring out a check. If they answer, plates sit under the heat lamp. If they don't, the call is gone and nobody records that it happened.
Most operators solve this by letting it ring. The rest send it to a voicemail box that gets cleared, if at all, by a morning manager who has no way to act on a message left seven hours earlier. Voicemail after midnight is arguably worse than an unanswered ring, because a caller who reaches a recording usually reads it as closed and stops calling.
That is the actual loss. Not the order, which was maybe $25, but the assumption you are shut. The after-hours coverage argument is mostly about that assumption rather than about any single ticket.
What the 2 a.m. call mix actually looks like
Pull a week of overnight calls at a diner and the pattern is narrow. The largest category by far is some version of "are you open right now," often from someone standing in a parking lot two blocks away.
After that: whether the full menu is running or only the late line, takeout orders from hospital and warehouse shift workers who order the same thing every night, the bar-close wave between 2:05 and 2:45, delivery drivers who cannot find the entrance, and a steady background of robocalls that a person has to pick up to identify. Spam alone can be a meaningful share of overnight rings, and there is a separate fix for robocalls on the restaurant line.
The shift workers are worth noticing separately. Hospitals, distribution centers, and police departments near a 24-hour diner generate the same handful of callers night after night, and those people order at the same time from the same short list. They are the closest thing an overnight shift has to regulars, and they are also the ones most likely to stop calling after two unanswered attempts, because they have four other options open at that hour and no particular loyalty to a phone that does not pick up.
Almost all of that is answerable from configuration rather than judgment. Hours, current menu, delivery radius, parking, whether you take cards at the counter. These are the same questions a voice agent handles from a static FAQ set during the day, and the answers do not change because it is dark out.
The daypart switch is where it breaks
Here is the part that catches diners specifically. You probably run a reduced overnight line, then flip to full breakfast somewhere around 5 or 6 a.m. when the second cook arrives.
If the agent is configured with one flat menu, it will happily take a 3:15 a.m. order for something your overnight cook cannot fire alone. The caller shows up, and now your one server is explaining a refund at the register. That is a worse outcome than a missed call, because you spent a customer's trip on it.
The configuration you want is time-bound menus, where each item carries the hours it is orderable and the agent reads whichever menu applies at the moment of the call. Ask about daypart menu switching directly in a demo, and test it by calling at 3 a.m. and again at 7.

If your crew marks items unavailable in the system, the agent picks it up on the next call. If your 86s are shouted across the pass, it will not. Calls it should hand to a person, even at 3 a.m.
Be honest about who the handoff target is. At 3 a.m. it is your one server. Every transfer you allow costs exactly the attention the phone was costing before, so a permissive escalation rule gives back most of what you bought.
Keep the transfer list short and defensible: a complaint about food already delivered, anything that sounds like a medical or safety situation, and a caller who is hostile. Everything else can take a message that surfaces in the morning. Someone asking whether you have their lost wallet does not need to interrupt service at 3 a.m.; they need a callback at 9. Set the handoff and failover policy before you go live, because the default is usually more permissive than a two-person shift can absorb.
Whether the arithmetic works for a diner
Plans start at $250 a month, so the question is whether the whole 24 hours recovers that, not whether overnight does. Do the arithmetic with your own numbers. If your average diner ticket is around $22 and you miss six calls a day across all shifts, and half of those were orders, that is roughly $66 a day in recoverable revenue, or about $2,000 a month against a $250 line item. If you miss one call a day, the case is much thinner and you should say so out loud rather than talk yourself into it.
The honest version: if you are a 24-hour diner doing almost no takeout, and your overnight calls are five a night that are all "are you open," a voice agent is a modest convenience, not a turnaround. It becomes compelling when takeout is a real channel and your dinner and bar-close windows are where the rings pile up.
